Similar to Mr. Tam's point of view, Ms. Khanh Huyen's mother-in-law (24 years old - District II) tried her best to defend the "trick" of boiling meat to ensure food safety. She said: "Normally, I often wash the meat thoroughly before cooking to remove dirt. However, my mother-in-law thinks that is the wrong way. She said that the meat must be boiled twice to ensure safety. I explained it based on scientific research, but she dismissed it and said that I did not know how to cook."
Due to different cooking views, Ms. Huyen and her mother-in-law often argued in the kitchen. Therefore, when boiling meat, Ms. Huyen had to indulge her mother and do it the old-fashioned way.

A BAD HABIT
According to Dr. Hoang Thi Thuy Ha (Clinical Nutrition Institute), the nutrients in meat are mainly protein and fat, while vitamins and amino acids are mainly found in protein muscle cells. Therefore, women have the habit of buying meat and blanching it in boiling water in the hope of removing chemicals and dirt, which is not the right way.
Dr. Thuy Ha explained: “If you put the meat in boiling water without washing it properly, it will cause the meat to denature and shrink, making it absorb more chemicals and dirt. Therefore, the meat becomes more toxic.”
Therefore, the most standard way to boil meat is first, housewives need to wash the meat many times with clean water or diluted salt water. Because dissolved salt water has the effect of removing dirt from the meat, and also makes the meat more delicious when cooked. Because the meat has been washed, you just need to boil the meat. When boiled, although the meat will shrink, because it has been cleaned, it will no longer absorb dirt like in the above case.
